Copycat Crunchwrap Supreme

After months of reminders, requests and pleas, I decided to try to recreate one of my brother's favourite fast food delicacies - the Crunchwrap Supreme from Taco Bell!

It was the perfect occasion, a Vancouver Canucks game night, so I gathered up my ingredients & supplies and set to work! Despite it being fast food, I expected it to be harder than it was! I was pleasantly surprised at how straightforward the steps were and that nothing went wrong! Here's how to make these beauties --

The first thing I did was bake two boneless skinless chicken breasts in the oven with a good sprinkle of salt & pepper. When they had cooked through and cooled slightly, I shredded them up with clean hands (2 forks work too if you're a germaphobe). I placed the shredded chicken in a skillet, seasoned it with taco seasoning and a touch of cayenne pepper and set it aside. Alternately, you could use ground beef or veggie ground beef if that's more your style.

 

Assembly is my favourite part! Buy the largest size of soft tortilla you can find at the store. In the centre of the tortilla, add a circle of the shredded chicken. Next, cover the chicken with cheese sauce. I think you could use homemade cheese sauce if you're feeling ambitious, but we used a store bought salsa con queso made by Tostitos and it was really yummy! After adding the sauce, place the whole thing in the microwave for 45 seconds to warm the sauce and soften the tortilla - this will also make the folding part easier. (Side note: a microwaved tortilla is only soft temporarily, then it turns rock hard. Make sure you work fast after this step)


Remove it from the microwave and place a hard corn taco on top. After the taco comes all your toppings. You can play around and get creative with all sorts of toppings, but we wanted to stay true to Taco Bell's version, so we added sour cream, shredded iceberg lettuce, chopped tomatoes and cheddar cheese. We discovered that our soft flour tortillas were not quite big enough to fold around all the toppings so we cut a small circle from another tortilla and added it on top to give us a good seal.


The folding was a bit tricky the first time, but it got easier. Just start with a small fold towards the centre and work your way around until it's all sealed up. To cook the crunchwrap you have two options - if you have a sandwich grill or press, definitely use it..if not, a stovetop pan will work just fine. We carefully placed ours in a panini grill and let it cook until it had nice grill marks on top. If you use a pan, make sure you start with the folded side facing down.

When it's all warm and golden brown, add hot sauce to make it a true Taco Bell masterpiece! Delicioso!
